Ingredients
- 8 ounces pasta
- 1 pound ground beef
- 1 can (10 ounces) Rotel diced tomatoes with green chilies
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or a cheese of your choice)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional: chopped cilantro for garnish
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- Heat olive oil over medium heat in a large skillet. Add ground beef and cook until browned. Drain excess fat.
- Stir in the Rotel tomatoes, heavy cream, and cheese into the skillet. Cook until the cheese is melted and the mixture is heated through.
- Add the drained pasta to the skillet and toss to combine. Season with salt and pepper to taste.
