Ingredients

  • 8 oz rotini pasta
  • 1 lb ground beef
  • 1 can (10 oz) Rotel tomatoes
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)


Instructions

  1. Cook the rotini pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef, cooking until browned while seasoning with salt and pepper.
  3. Stir in the Rotel tomatoes and heavy cream. Bring to a simmer.
