Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth (960 ml)
  • 6 medium potatoes, peeled and diced
  • 1 cup plain yogurt (240 ml)
  • 1 cup shredded mozzarella cheese (120 g)
  • 1/2 cup coconut milk (120 ml)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons chopped fresh chives (30 ml)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the diced potatoes to the pot and cook until tender, about 15-20 minutes.
  6. Once potatoes are soft, remove the pot from heat.
  7. Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
  8. Return the pot to low heat.
  9. Stir in the sour cream and mix until fully incorporated.
  10. Add the shredded cheddar cheese and stir until melted.
  11. Pour in the milk and stir to combine.
  12. Season the soup with salt and black pepper to taste.
  13. Cook the soup for an additional 5 minutes, stirring occasionally.
  14. Ladle the soup into bowls and garnish with fresh chives.
  15. Serve hot and enjoy.
