Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth (960 ml)
- 6 medium potatoes, peeled and diced
- 1 cup plain yogurt (240 ml)
- 1 cup shredded mozzarella cheese (120 g)
- 1/2 cup coconut milk (120 ml)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons chopped fresh chives (30 ml)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add the diced potatoes to the pot and cook until tender, about 15-20 minutes.
- Once potatoes are soft, remove the pot from heat.
- Use an immersion blender to blend the soup until smooth, or transfer to a blender in batches.
- Return the pot to low heat.
- Stir in the sour cream and mix until fully incorporated.
- Add the shredded cheddar cheese and stir until melted.
- Pour in the milk and stir to combine.
- Season the soup with salt and black pepper to taste.
- Cook the soup for an additional 5 minutes, stirring occasionally.
- Ladle the soup into bowls and garnish with fresh chives.
- Serve hot and enjoy.
