Description

A delightful creamy green bean potato salad that combines tender potatoes and crisp green beans in a flavorful dressing, perfect for any gathering.


Ingredients

  • Fresh green beans
  • 2 cups Potatoes
  • 1/2 cup Mayonnaise
  • 1/4 cup Sour cream
  • 1 tablespoon Mustard
  • 1/4 cup Red onion, chopped
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (optional)


Instructions

  1. Boil the potatoes until tender, cool and chop into bite-sized pieces.
  2. Blanch the green beans in boiling water for a few minutes, then plunge into ice water.
  3. Mix mayonnaise, sour cream, mustard, chopped red onion, salt, and pepper for the dressing.
  4. Combine potatoes and green beans in a large bowl, pour the dressing over and toss gently.
  5. Garnish with fresh herbs if desired.
  6. Chill before serving to enhance flavors.

Notes

For best results, use fresh, bright green beans and Yukon Gold or red potatoes. Adjust dressing ingredients to suit your taste.
