Ingredients
- Fresh green beans
- 2 cups Potatoes
- 1/2 cup Mayonnaise
- 1/4 cup Sour cream
- 1 tablespoon Mustard
- 1/4 cup Red onion, chopped
- Salt to taste
- Pepper to taste
- Fresh herbs (optional)
Instructions
- Boil the potatoes until tender, cool and chop into bite-sized pieces.
- Blanch the green beans in boiling water for a few minutes, then plunge into ice water.
- Mix mayonnaise, sour cream, mustard, chopped red onion, salt, and pepper for the dressing.
- Combine potatoes and green beans in a large bowl, pour the dressing over and toss gently.
- Garnish with fresh herbs if desired.
- Chill before serving to enhance flavors.
Notes
For best results, use fresh, bright green beans and Yukon Gold or red potatoes. Adjust dressing ingredients to suit your taste.
