Ingredients

  • 6 slices beef bacon (150 g), cut into 1/2 inch pieces
  • 1 onion, finely chopped
  • 2 (300 g) cans condensed chicken broth
  • 475 ml water
  • 5 large potatoes, diced
  • 5 ml salt
  • 5 ml dried dill weed
  • 5 ml ground white pepper
  • 60 g all-purpose flour
  • 475 ml half-and-half cream
  • 1 (355 ml) can evaporated milk


Instructions

  1. Place the chopped bacon and onion into a large pan. Heat over medium-high flame until the bacon is browned and the onions are tender. Remove any extra fat.
  2. Move the cooked bacon and onion to a crockpot, then add the chicken broth, water, diced potatoes, salt, dill, and white pepper. Put the lid on and cook on low for 6 to 7 hours, stirring from time to time.
  3. In a separate bowl, combine the flour and half-and-half by whisking them together. Pour this mixture into the soup along with the evaporated milk. Cover again and let it cook for an additional 30 minutes before serving.

Notes

  • For a healthier option, you can use turkey bacon instead of beef bacon.
  • To thicken the soup, mash some potatoes before adding the flour mixture.
  • Adjust seasoning to taste by adding more salt, dill, or white pepper.
