Description

A comforting and flavorful creamy pasta dish featuring butternut squash, savory sausage, and fresh spinach, perfect for cozy meals and gatherings.


Ingredients

  • 8 oz pasta (your choice)
  • 1 medium butternut squash, peeled and diced
  • 1 lb Italian sausage (or your choice of sausage)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Parmesan cheese, for serving


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned. Remove the sausage from the pan and set aside.
  3. In the same skillet, add garlic and diced butternut squash. Sauté until the squash is soft, about 10-15 minutes.
  4. Stir in the heavy cream and spinach. Cook until the spinach wilts.
  5. Add the cooked sausage and pasta to the skillet. Toss to combine. Season with salt and pepper to taste.
  6. Serve hot, topped with Parmesan cheese.

Notes

For added depth, consider roasting the butternut squash before adding it to the skillet. You can adjust seasoning to your liking or experiment with different herbs.
