Ingredients
- – 4 oz. cream cheese (room temperature) (113 g)
- – 115 oz. can black beans (3260 g)
- – 14 oz. can diced green chiles (397 g)
- – 2 green onions (60 g)
- – 3 dashes hot sauce (optional) (5 ml)
- – 1/8 tsp garlic powder (0.5 g)
- – 1/8 tsp salt (or to taste) (0.5 g)
- – 15 6-inch corn tortillas (38 cm)
- – 3 Tbsp vegetable oil, divided, for frying (45 ml)
Instructions
- Wash and dry the black beans, and remove any liquid from the can of diced green chiles. Chop the green onions into small pieces. Combine the cream cheese, black beans, green chiles, chopped green onions, hot sauce, garlic powder, and salt in a mixing bowl. Mix thoroughly until well-blended, then taste and adjust the seasoning with more salt or hot sauce if needed.
- Place a stack of five tortillas on a plate, cover them with a moist paper towel, and microwave for around 20 seconds to make them more pliable. This helps to avoid tearing during rolling. Warm a large skillet, either non-stick or cast iron, over medium heat. As the pan is warming, quickly spoon around 2 tablespoons of the bean mixture onto each tortilla and roll them up tightly.
- Once you have filled five tortillas, pour about 1 tablespoon of vegetable oil into the pan, allowing it to heat until it begins to shimmer. Place the rolled taquitos in the pan with the seam side facing down. Cook them until each side turns golden brown and crispy, then move them to a clean plate.
- Repeat the steps with batches of five taquitos, adding a bit more oil to the pan each time, until all the filling is used up, resulting in approximately 15 taquitos. Serve them immediately while they’re still warm.
