Ingredients

  • 2 cups cooked chicken, shredded (about 250 g)

  • 1 tablespoon Dijon mustard (about 15 ml)
  • 1 tablespoon agave nectar (about 15 ml)
  • 1/4 teaspoon salt (about 1.5 g)
  • 1/4 teaspoon ground white pepper (about 0.5 g)
  • 1/4 cup green onions, chopped (about 25 g)
  • 1/4 cup celery, diced (about 30 g)
  • 1 tablespoon lemon juice (about 15 ml)
  • Lettuce leaves for wrapping (such as Romaine or Bibb lettuce)


Instructions

  1. In a large mixing bowl, combine the shredded cooked chicken, dried cranberries, and chopped walnuts.
  2. Add the mayonnaise, Dijon mustard, and honey to the bowl with the chicken mixture.
  3. Season the mixture with salt and black pepper.
  4. Add the chopped green onions and diced celery to the bowl.
  5. Pour the lemon juice over the mixture.
  6. Stir all ingredients together until well combined.
  7. Taste and adjust seasoning if necessary.
