Ingredients

  • 1 tsp vegetable oil (5 ml)
  • 1/2 cup brown sugar (100 g)
  • pinch of salt
  • 1 3/4 cups milk (420 ml)
  • 1 large egg
  • 1 tsp vanilla extract (5 ml)
  • 1 1/2 cups rolled oats (150 g)
  • 1/2 cup almonds, coarsely chopped (75 g)
  • 1 1/2 cups dried cranberries (180 g)


Instructions

  1. Heat the oven to 350°F. Lightly coat an 8×8″ baking dish or a 9″ loaf pan with vegetable oil.
  2. In a bowl, blend together the brown sugar, salt, milk, egg, and vanilla extract until smooth and the egg is fully incorporated.
  3. Fold in the rolled oats, along with most of the chopped almonds and cranberries, reserving a small amount to sprinkle on top.
  4. Place in the oven for 45-50 minutes until the mixture is firm and starts to turn golden on the surface.
  5. Enjoy with half & half, yogurt, or your preferred topping!
