Ingredients
- 1 tsp vegetable oil (5 ml)
- 1/2 cup brown sugar (100 g)
- pinch of salt
- 1 3/4 cups milk (420 ml)
- 1 large egg
- 1 tsp vanilla extract (5 ml)
- 1 1/2 cups rolled oats (150 g)
- 1/2 cup almonds, coarsely chopped (75 g)
- 1 1/2 cups dried cranberries (180 g)
Instructions
- Heat the oven to 350°F. Lightly coat an 8×8″ baking dish or a 9″ loaf pan with vegetable oil.
- In a bowl, blend together the brown sugar, salt, milk, egg, and vanilla extract until smooth and the egg is fully incorporated.
- Fold in the rolled oats, along with most of the chopped almonds and cranberries, reserving a small amount to sprinkle on top.
- Place in the oven for 45-50 minutes until the mixture is firm and starts to turn golden on the surface.
- Enjoy with half & half, yogurt, or your preferred topping!
