Ingredients
- – 1/4 cup (60 ml) finely chopped almonds
- – 1/4 cup (60 ml) breadcrumbs
- – 1/8 tsp (0.5 ml) salt
- – 1/4 tsp (1.25 ml) parsley
- – 2 tbsp (30 ml) vegetable oil
- – 2 salmon fillets (approx 113-170 g each) fresh or thawed if frozen
- – 1/4 cup (60 ml) cranberry sauce
- – serve atop 2-4 cups (720 ml) fresh baby spinach or with your favorite veggie side!
Instructions
- Set your oven to preheat at 400°F.
- In a small mixing bowl, combine the almonds, breadcrumbs, salt, and parsley.
- Heat the vegetable oil and drizzle it over the almond mixture, stirring well to ensure everything is coated.
- Dry the salmon fillets with a paper towel and spread cranberry sauce over them, using about 2 tablespoons for each piece. Cover with the almond topping.
- Cook in the oven for 10-15 minutes, until the salmon is tender and flakes easily with a fork. Typically, allow for 10 minutes of cooking per inch of thickness to ensure the right doneness.
- Once cooked, remove the skin and serve the salmon on a bed of fresh baby spinach, or sauté the spinach lightly in a skillet with a bit of vegetable oil and a touch of salt. Decide whether to serve it as a salad or cooked, depending on your preference. Enjoy your meal!
