Ingredients

  • – 1/4 cup (60 ml) breadcrumbs
  • – 1/8 tsp (0.5 ml) salt
  • – 1/4 tsp (1.25 ml) parsley
  • – 2 tbsp (30 ml) vegetable oil
  • – 2 salmon fillets (approx 113-170 g each) fresh or thawed if frozen
  • – 1/4 cup (60 ml) cranberry sauce
  • – serve atop 2-4 cups (720 ml) fresh baby spinach or with your favorite veggie side!


Instructions

  1. Set your oven to preheat at 400°F.
  2. In a small mixing bowl, combine the almonds, breadcrumbs, salt, and parsley.
  3. Heat the vegetable oil and drizzle it over the almond mixture, stirring well to ensure everything is coated.
  4. Dry the salmon fillets with a paper towel and spread cranberry sauce over them, using about 2 tablespoons for each piece. Cover with the almond topping.
