Ingredients

  • Dried cranberries, 1/2 cup (65g)
  • Chopped walnuts, 1/4 cup (30g)
  • Orange, 1 medium, peeled and segmented
  • Celery, 2 stalks, diced
  • Green onions, 2, sliced
  • Mayonnaise, 1/3 cup (80ml)
  • Greek yogurt, 1/3 cup (80ml)
  • Honey, 1 tablespoon (15ml)
  • Salt, 1/2 teaspoon (2.5g)
  • Black pepper, 1/4 teaspoon (1g)
  • Mixed salad greens, 4 cups (about 120g)
  • Mason jars, 4, for serving


Instructions

  1. Dice the cooked chicken breast into small, bite-sized pieces.
  2. In a large bowl, combine the diced chicken, dried cranberries, chopped walnuts, orange segments, diced celery, and sliced green onions.
  3. In a separate bowl, mix together the mayonnaise, Greek yogurt, honey, salt, and black pepper until smooth.
  4. Pour the dressing over the chicken mixture and stir until all ingredients are well coated.
  5. Divide the mixed salad greens evenly among the four mason jars.
  6. Spoon the chicken salad mixture on top of the salad greens in each mason jar.
  7. Seal the mason jars with their lids and refrigerate until ready to serve.
