Ingredients
- Cooked chicken breast, 2 cups (about 300g)
- Dried cranberries, 1/2 cup (65g)
- Chopped walnuts, 1/4 cup (30g)
- Orange, 1 medium, peeled and segmented
- Celery, 2 stalks, diced
- Green onions, 2, sliced
- Mayonnaise, 1/3 cup (80ml)
- Greek yogurt, 1/3 cup (80ml)
- Honey, 1 tablespoon (15ml)
- Salt, 1/2 teaspoon (2.5g)
- Black pepper, 1/4 teaspoon (1g)
- Mixed salad greens, 4 cups (about 120g)
- Mason jars, 4, for serving
Instructions
- Dice the cooked chicken breast into small, bite-sized pieces.
- In a large bowl, combine the diced chicken, dried cranberries, chopped walnuts, orange segments, diced celery, and sliced green onions.
- In a separate bowl, mix together the mayonnaise, Greek yogurt, honey, salt, and black pepper until smooth.
- Pour the dressing over the chicken mixture and stir until all ingredients are well coated.
- Divide the mixed salad greens evenly among the four mason jars.
- Spoon the chicken salad mixture on top of the salad greens in each mason jar.
- Seal the mason jars with their lids and refrigerate until ready to serve.
