Description

A nutritious treat combining chewy cranberries, crunchy almonds, and sweet coconut, perfect for a quick energizing snack.


Ingredients

  • 1 cup oatmeal
  • 1/3 cup chopped almonds
  • 1/3 cup sweetened shredded coconut
  • 1 tablespoon ground flaxseed (optional)
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey
  • 1 tablespoon chia seeds
  • 1/3 cup dried cranberries, roughly chopped


Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix the oatmeal, chopped almonds, and shredded coconut. Spread the mixture evenly on a baking sheet.
  3. Bake for 8-10 minutes, stirring halfway through. Remove from oven and let cool completely.
  4. In a medium bowl, microwave the nut butter until it becomes runny.
  5. Combine the cooled baked mixture with the nut butter, flaxseed (if using), honey, chia seeds, and chopped cranberries. Stir until well coated.
  6. Form the mixture into 1.5-inch balls and place on a plate or baking sheet. Refrigerate for about 30 minutes to set.
  7. Store in an airtight container for up to a week or freeze for longer storage.

Notes

These energy bites can be customized with different nut butters or dried fruits. Adjust honey to taste for desired sweetness.
