A nutritious treat combining chewy cranberries, crunchy almonds, and sweet coconut, perfect for a quick energizing snack.
Ingredients
- 1 cup oatmeal
- 1/3 cup chopped almonds
- 1/3 cup sweetened shredded coconut
- 1 tablespoon ground flaxseed (optional)
- 1/2 cup nut butter (peanut or almond)
- 1/4 cup honey
- 1 tablespoon chia seeds
- 1/3 cup dried cranberries, roughly chopped
Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix the oatmeal, chopped almonds, and shredded coconut. Spread the mixture evenly on a baking sheet.
- Bake for 8-10 minutes, stirring halfway through. Remove from oven and let cool completely.
- In a medium bowl, microwave the nut butter until it becomes runny.
- Combine the cooled baked mixture with the nut butter, flaxseed (if using), honey, chia seeds, and chopped cranberries. Stir until well coated.
- Form the mixture into 1.5-inch balls and place on a plate or baking sheet. Refrigerate for about 30 minutes to set.
- Store in an airtight container for up to a week or freeze for longer storage.
Notes
These energy bites can be customized with different nut butters or dried fruits. Adjust honey to taste for desired sweetness.
