Ingredients
- 6 medium tomatoes, diced (without seeds) (900 g)
- 1 large avocado (or more), chopped (300 g)
- 1/3 cup red onion, diced (80 ml)
- 1 large jalapeño, diced (with or without seeds)
- 1/3 cup cilantro, chopped (80 ml)
- 15 oz black beans, rinsed and strained (425 g)
- 10 oz canned corn kernels, drained (285 g)
- kosher salt and freshly ground black pepper, to taste
- 1 large lime, freshly squeezed
- a drizzle of apple cider vinegar
Instructions
- Chop the vegetables. Cut the tomatoes in half, remove the seeds and some of the pulp, then dice them into small pieces and place them in a mixing bowl. Finely chop the onion, jalapeño, and cilantro, and add them to the bowl.
- Incorporate the legumes and corn. Pour the rinsed black beans and drained corn into the bowl with the vegetables.
- Include the avocado. Cut the avocado (or avocados) into cubes and mix them into the dish thoroughly.
- Mix in the dressing. Squeeze the lime over the mixture and add a splash of apple cider vinegar. Season with kosher salt and freshly ground black pepper to your preference.
- Present the dish. Pair with your favorite tortilla chips or scoops for serving.
Notes
- For a smoother consistency, mash some avocado into the salad to bind the ingredients together. Adjust the spiciness by removing or keeping the jalapeño seeds. Enhance the flavors by refrigerating the salad for 30 minutes before serving to meld the ingredients.
