Ingredients
- 8-10 hard-boiled eggs
- 2 cups apple cider vinegar
- 1 cup white sugar
- 1 cup brown sugar
- 1 tsp garlic powder
- 1 tsp ground turmeric
- 1/2 tsp cayenne pepper
- 1 cup sliced jalapenos
Instructions
- Hard-boil the eggs using an Instant Pot or on the stove; allow them to cool and then peel.
- Slice the jalapenos about 1/4 inch thick, using gloves if you touch the insides.
- Prepare the pickling brine by heating the vinegar, sugars, garlic powder, turmeric, cayenne pepper, and jalapenos in a saucepan until the sugars dissolve.
- Place the eggs in jars and layer them with the jalapenos.
- Pour the brine over the eggs, leaving 1/4 inch of headspace.
- Let sit for 30 minutes before sealing with lids.
- Refrigerate and allow to marinate for at least a few hours, ideally a week, for maximum flavor.
- Enjoy within 3-4 months.
Notes
For varying heat, adjust cayenne pepper levels or the quantity of jalapenos. For sweeter eggs, increase the brown sugar.
