Description

Delight in the vibrant flavors of Cowboy Candy Pickled Eggs, a perfect combination of spicy and sweet hard-boiled eggs marinated in a tangy brine.


Ingredients

  • 8-10 hard-boiled eggs
  • 2 cups apple cider vinegar
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground turmeric
  • 1/2 tsp cayenne pepper
  • 1 cup sliced jalapenos


Instructions

  1. Hard-boil the eggs using an Instant Pot or on the stove; allow them to cool and then peel.
  2. Slice the jalapenos about 1/4 inch thick, using gloves if you touch the insides.
  3. Prepare the pickling brine by heating the vinegar, sugars, garlic powder, turmeric, cayenne pepper, and jalapenos in a saucepan until the sugars dissolve.
  4. Place the eggs in jars and layer them with the jalapenos.
  5. Pour the brine over the eggs, leaving 1/4 inch of headspace.
  6. Let sit for 30 minutes before sealing with lids.
  7. Refrigerate and allow to marinate for at least a few hours, ideally a week, for maximum flavor.
  8. Enjoy within 3-4 months.

Notes

For varying heat, adjust cayenne pepper levels or the quantity of jalapenos. For sweeter eggs, increase the brown sugar.
