Description

A creamy and nutritious tuna salad made with cottage cheese, fresh vegetables, and herbs, perfect for a light lunch or quick dinner.


Ingredients

  • Three 5 oz. cans of white albacore tuna, drained well
  • 1/3-1/2 cup of cottage cheese
  • 1 stalk of celery, minced
  • 3 tablespoons of red onion, minced
  • 2-3 tablespoons of dill pickles or sweet pickles, minced
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of lemon juice
  • 1 clove of garlic, finely minced
  • 2 tablespoons of fresh chives, parsley, or dill
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • Optional hot sauce


Instructions

  1. Blend the cottage cheese until it reaches a smooth, creamy consistency.
  2. Combine the drained tuna, cottage cheese, minced celery, red onion, pickles, Dijon mustard, and lemon juice in a medium bowl.
  3. Add in the finely minced garlic, fresh herbs, salt, and pepper.
  4. Mix everything thoroughly until well-blended, adjusting seasoning to taste.
  5. Incorporate hot sauce if desired for extra kick.

Notes

For enhanced flavor, chill the salad for 30 minutes before serving. Experiment with different herbs and add lemon zest for a refreshing twist.
