A creamy and rich mousse that combines the flavors of peanut butter and cottage cheese for a healthy dessert option.
Ingredients
- 1 cup full-fat cottage cheese
- 4 tablespoons creamy natural peanut butter, sugar-free
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt (optional)
- 1–2 tablespoons milk (if needed)
Instructions
- Strain the cottage cheese for 1–2 minutes to remove excess liquid and set aside.
- Set up a clean 4-cup food processor or blender with a secure blade.
- Add the strained cottage cheese, peanut butter, sweetener, vanilla, and salt. Distribute evenly.
- Blend for 45–60 seconds until smooth and creamy, scraping the sides halfway.
- Check the texture. If too thick, blend in 1–2 tablespoons of milk gradually.
- Transfer the mousse to a bowl, cover, and chill for 15–20 minutes to set.
- Portion the mousse into 2–4 small bowls or jars (1/4–1/2 cup per serving).
- Serve chilled with optional toppings.
Notes
For added richness, try flavored peanut butters or customize with sweeteners. Add cocoa powder for a chocolate version.
