A creamy and nutritious pasta sauce made with cottage cheese, Parmesan, and garlic, perfect for coating your favorite pasta.
Ingredients
- 2 teaspoons olive oil (or butter)
- 1 1/2 cups cottage cheese
- 3/4 cup skim milk (or half-and-half)
- 1/2 cup grated Parmesan cheese
- 6 garlic cloves
- 1 pinch black pepper (to taste)
- 1 pinch salt (to taste)
- 2 tablespoons cornstarch
- 4 tablespoons water
- 8 ounces cooked pasta (spaghetti, fettuccine, or penne)
Instructions
- Cook the pasta following the packaging instructions for al dente. Drain and set aside.
- Add the cottage cheese, skim milk, and Parmesan to a high-speed blender or food processor. Blend on high until creamy and smooth.
- Sauté the garlic in olive oil over medium heat until fragrant, about 30 seconds to 1 minute.
- Pour the blended mixture into the saucepan and bring to a gentle simmer. Reduce heat to low.
- Whisk the cornstarch with cold water in a small bowl, then mix it into the sauce and cook until it thickens.
- Stir in the cooked pasta and heat until warm, ensuring the pasta is fully coated.

For added flavor, consider incorporating fresh herbs like basil or thyme. Adjust thickness with additional skim milk if needed.
