A delightful and protein-packed flatbread made with cottage cheese that is crispy on the outside and soft on the inside.
Ingredients
- 1 cup cottage cheese
- 1 cup all-purpose or whole wheat flour
- 1 large egg
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon olive oil
Instructions
- Combine cottage cheese, flour, egg, baking powder, and salt in a mixing bowl until a smooth batter forms.
- Preheat a non-stick skillet over medium heat and add olive oil.
- Pour a ladleful of batter into the skillet, spreading it into a circle. Cook for 2-3 minutes until golden at the edges and set on top.
- Flip and cook for another 2-3 minutes.
- Repeat the process with the remaining batter. Serve warm with your choice of toppings.
