- Pinch of salt
- 1 tsp maple syrup (for the gooey center)
- 0.25 tsp cinnamon
- 1 tbsp Greek yogurt (or cream cheese)
- Sweetener to taste (e.g., maple syrup)
Instructions
- In a microwave-safe mug, combine the cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and a pinch of salt. Mix until everything becomes smooth.
- In a small bowl, mix 1 teaspoon of maple syrup with 0.25 teaspoon of cinnamon.
- Dollop this mixture into the center of the batter and swirl gently.
- Microwave on high for 60 to 90 seconds, or until the cake is set and slightly puffed.
- For topping, mix Greek yogurt (or cream cheese) with your chosen sweetener. Spoon over the warm mug cake before serving.
