  • Pinch of salt
  • 1 tsp maple syrup (for the gooey center)
  • 0.25 tsp cinnamon
  • 1 tbsp Greek yogurt (or cream cheese)
  • Sweetener to taste (e.g., maple syrup)


Instructions

  1. In a microwave-safe mug, combine the cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and a pinch of salt. Mix until everything becomes smooth.
  2. In a small bowl, mix 1 teaspoon of maple syrup with 0.25 teaspoon of cinnamon.
  3. Dollop this mixture into the center of the batter and swirl gently.
  4. Microwave on high for 60 to 90 seconds, or until the cake is set and slightly puffed.
