Ingredients
- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup low-fat cottage cheese
- 1 cup chopped celery
- ½ cup finely diced red onion
- 2 tbsp Dijon mustard
- 2 tbsp fresh herbs (dill or parsley)
- Salt and pepper to taste
Instructions
- Season the chicken breasts generously with salt and pepper.
- Place the seasoned chicken on the parchment-lined baking sheet.
- Bake the chicken for 25-30 minutes, or until fully cooked.
- Allow the chicken to cool for 5 minutes before handling.
- Chop the celery and red onion into small pieces.
- Shred the cooled chicken into bite-sized pieces using forks or fingers.
- Combine the shredded chicken, cottage cheese, chopped celery, diced onion, Dijon mustard, and fresh herbs in a large mixing bowl.
- Stir everything until well-coated, ensuring each ingredient blends perfectly.
- Taste the salad and adjust seasoning with more salt or pepper as needed.
