Description

A comforting and nutritious chicken bake featuring creamy cottage cheese and a blend of spices, perfect for busy weeknights.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • ¼ cup grated Parmesan cheese
  • ¼ cup chicken broth
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Olive oil spray
  • Optional garnish: chopped parsley or chives


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray an 8×8-inch baking dish with olive oil.
  2. Combine cottage cheese, Parmesan cheese, chicken broth, garlic powder, onion powder, smoked paprika, salt, and pepper in a blender. Blend for 30-45 seconds until smooth.
  3. Place the chicken breasts in the prepared baking dish and pour the blended sauce over them.
  4. Bake uncovered for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbly.
  5. Let the dish rest for 5 minutes before serving. Garnish with chopped parsley or chives if desired.

Notes

For extra flavor, consider marinating the chicken in some of the blended sauce before baking. Incorporating fresh vegetables like spinach or bell peppers can add nutrition and color.
