A delightful and healthy banana bread made with cottage cheese and ripe bananas, perfect for any time of the day.
Ingredients
- 1 cup cottage cheese (blended smooth)
- 2 large ripe bananas
- 2 large eggs
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 0.25 teaspoon salt
- Optional: 0.25 cup chopped walnuts, chocolate chips, or oats
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a loaf pan or line it with parchment paper.
- Blend cottage cheese, bananas, eggs, maple syrup, and vanilla until completely smooth in a food processor or blender.
- Add baking soda, cinnamon, and salt to the wet mixture and stir gently until just combined. Do not over-mix.
- Fold in optional mix-ins like walnuts or chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use ripe bananas for maximum sweetness. Experiment with mix-ins like nuts or chocolate to customize the flavor.
