Description

A delightful and healthy banana bread made with cottage cheese and ripe bananas, perfect for any time of the day.


Ingredients

  • 1 cup cottage cheese (blended smooth)
  • 2 large ripe bananas
  • 2 large eggs
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • Optional: 0.25 cup chopped walnuts, chocolate chips, or oats


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan or line it with parchment paper.
  3. Blend cottage cheese, bananas, eggs, maple syrup, and vanilla until completely smooth in a food processor or blender.
  4. Add baking soda, cinnamon, and salt to the wet mixture and stir gently until just combined. Do not over-mix.
  5. Fold in optional mix-ins like walnuts or chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
