Deliciously healthy cottage cheese bagels made with almond flour, perfect for breakfast, lunch, or a snack.
Ingredients
- 1 cup almond flour
- 1 cup full-fat cottage cheese
- 2 large eggs
- 1 teaspoon baking powder
- 1 pinch salt
- 1 beaten egg (for brushing)
- Optional toppings: everything bagel seasoning, sesame seeds, shredded cheese
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Combine almond flour, baking powder, and salt in a mixing bowl and stir until well mixed.
- Add cottage cheese and eggs to the dry mixture, mixing until a thick dough forms.
- Divide the dough into six equal portions, roll each into a ball, and poke a hole in the center to shape into rings.
- Place bagels on the baking sheet, brush with the beaten egg, and add any optional toppings.
- Bake for 18 to 22 minutes until golden brown.
- Allow to cool for 10 minutes before serving.
