Description

Deliciously healthy cottage cheese bagels made with almond flour, perfect for breakfast, lunch, or a snack.


Ingredients

  • 1 cup almond flour
  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 beaten egg (for brushing)
  • Optional toppings: everything bagel seasoning, sesame seeds, shredded cheese


Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine almond flour, baking powder, and salt in a mixing bowl and stir until well mixed.
  3. Add cottage cheese and eggs to the dry mixture, mixing until a thick dough forms.
  4. Divide the dough into six equal portions, roll each into a ball, and poke a hole in the center to shape into rings.
  5. Place bagels on the baking sheet, brush with the beaten egg, and add any optional toppings.
  6. Bake for 18 to 22 minutes until golden brown.
  7. Allow to cool for 10 minutes before serving.
