Crispy edges and fluffy interiors characterize these delightful cornbread waffle bites served with a sweet honey butter syrup.
Ingredients
- 1 cup cornbread mix
- 1/2 cup buttermilk
- 1 large egg
- 1/4 cup shredded cheddar cheese (optional)
- 1/4 cup cooked and crumbled bacon (optional)
- 1/4 cup honey
- 2 tbsp unsalted butter
- 1 tbsp maple syrup (optional)
- Pinch of salt
Instructions
- In a mixing bowl, combine cornbread mix, buttermilk, and egg until smooth.
- Fold in cheddar cheese and bacon if desired.
- Preheat mini waffle maker and lightly grease it.
- Add about 1 tablespoon of batter to each section of the waffle maker.
- Close the lid and cook for 3-4 minutes or until golden brown.
- Repeat with remaining batter.
- For syrup, combine honey, butter, and maple syrup in a saucepan over low heat, stirring until smooth.
- Drizzle honey butter syrup over waffle bites before serving.
Notes
Consider adding fresh herbs or spices for different flavors. Leftover waffle bites can be frozen for later enjoyment.
