Ingredients
- 1 pound ground beef
- 1 onion, diced
- 1 red bell pepper, chopped
- 1 can of corn, drained
- 1 can of black beans, rinsed and drained
- 1 can of diced tomatoes
- 1 package of cornbread mix
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ground beef, onion, and red bell pepper in a skillet over medium heat until the beef is browned and the vegetables are softened.
- Stir in the corn, black beans, diced tomatoes, chili powder, and cumin, mixing well.
- Prepare the cornbread mix according to package instructions in a separate bowl.
- Pour the beef mixture into a greased baking dish and spread evenly.
- Pour the cornbread batter over the beef mixture, making sure it covers the top.
- Sprinkle shredded cheddar cheese on top of the cornbread.
- Bake for 25-30 minutes until the cornbread is golden brown and cooked through.
Notes
