Description

A comforting casserole filled with ground beef, vibrant vegetables, and a fluffy cornbread topping, perfect for family gatherings or weeknight dinners.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 1 can of corn, drained
  • 1 can of black beans, rinsed and drained
  • 1 can of diced tomatoes
  • 1 package of cornbread mix
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the ground beef, onion, and red bell pepper in a skillet over medium heat until the beef is browned and the vegetables are softened.
  3. Stir in the corn, black beans, diced tomatoes, chili powder, and cumin, mixing well.
  4. Prepare the cornbread mix according to package instructions in a separate bowl.
  5. Pour the beef mixture into a greased baking dish and spread evenly.
  6. Pour the cornbread batter over the beef mixture, making sure it covers the top.
  7. Sprinkle shredded cheddar cheese on top of the cornbread.
  8. Bake for 25-30 minutes until the cornbread is golden brown and cooked through.

Notes

For added spice, consider adjusting chili powder or adding jalapeños. Garnish with chopped green onions or a dollop of sour cream for extra flavor.
