Ingredients
- 1 cup + 2 tablespoons all-purpose flour
- 1 teaspoon cornstarch
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter (softened, at room temperature)
- 1/2 cup + 2 tablespoons granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 10 Oreo or chocolate sandwich cookies (coarsely chopped)
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper.
- Whisk together the flour, cornstarch, baking powder, baking soda, and salt in a small bowl. Set aside.
- Beat the softened butter and granulated sugar together in a large mixing bowl until smooth.
- Add the egg and vanilla extract, mixing until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until a thick cookie dough forms.
- Fold in the coarsely chopped chocolate sandwich cookies and white chocolate chips.
- Scoop rounded portions of dough onto the baking sheets and slightly press them down.
- Bake for 8 to 10 minutes or until edges are set but centers remain soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
For thicker cookies, use cold butter; for enhanced flavor, chill the dough for 30 minutes before baking.
