  • – 2 whole carrots – diced
  • – 6 russet potatoes – peeled and diced
  • – 1 teaspoon (5 g) salt – more to taste
  • – 1/2 teaspoon (3 ml) cracked black pepper – or 1/4 teaspoon (1 ml) ground black pepper
  • – 8 cups (1920 ml) (2 liters) vegetable broth
  • – 1 cup (240 ml) coconut cream
  • – 1 cup (240 ml) almond milk
  • – 3 tablespoons (30 g) cornstarch
  • – 1 ½ cups (150 g) freshly grated vegan cheddar
  • – optional garnishes: cooked and crumbled vegan bacon or bacon bits, fresh herbs such as thyme or parsley, cracked black pepper, vegan cheddar or vegan parmesan cheese


Instructions

  1. In a large pot, heat vegetable oil over medium-high heat and add diced onions, chopped celery, diced carrots, and minced garlic. Stir until the oil coats the ingredients. Cook for 2-3 minutes, stirring occasionally, until the onions become clear.
  2. Add the peeled and diced potatoes, then sprinkle with salt and pepper. Cook for another 5 minutes.
  3. Pour in the vegetable broth, bringing it to a gentle boil, and let it cook for 10 minutes until the potatoes start to soften.
  4. Combine cornstarch with almond milk, then gradually incorporate this mixture into the soup along with the coconut cream.
  5. Continue cooking for about 5 more minutes until the potatoes are tender when poked with a fork.
  6. Carefully blend the soup in batches until smooth, taking care with the hot liquid, and return it to the pot.
  7. Mix in the grated vegan cheddar until it fully melts. Taste and adjust seasoning with salt and pepper if necessary, then serve immediately with optional garnishes like fresh herbs, cracked black pepper, and vegan bacon bits if desired.
