A delightful coffee cake recipe that combines a moist cake with a sweet streusel topping, perfect for any gathering.
Ingredients
- 1 egg
- 1/4 cup vegetable or canola oil
- 1 teaspoon vanilla extract
- 3/4 cup sugar
- 1/2 cup milk
- 1/4 teaspoon salt
- 2 teaspoons baking powder
- 1 1/2 cups flour
- 2 tablespoons melted butter (for topping)
- 1/2 cup brown sugar (for topping)
- 2 teaspoons cinnamon (for topping)
- 2 tablespoons flour (for topping)
- 1/2 cup chopped walnuts (optional, for topping)
- 3/4 cup powdered sugar (for icing, optional)
- 1 tablespoon milk (for icing, optional, extra if needed)
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking pan.
- Beat the egg, then add the oil, vanilla, and milk. Stir in the sugar until well blended.
- Combine the flour, baking powder, and salt in another bowl. Add this mixture to the wet ingredients until just combined.
- Mix melted butter, brown sugar, cinnamon, flour, and optional walnuts in a small bowl until crumbly for the streusel topping.
- Pour half the cake batter into the prepared baking pan. Sprinkle half of the streusel topping over the batter. Add the remaining batter and top with the rest of the streusel.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for a few minutes, then transfer it to a wire rack.
- If desired, whisk powdered sugar with milk for a simple icing and drizzle over the cooled cake.
Notes
For a nut-free version, simply omit the walnuts. Dust with powdered sugar before serving for added sweetness and presentation.
