Description

A delightful dish combining salmon with a rich, creamy coconut curry sauce, perfect for bringing people together.


Ingredients

  • 2 salmon fillets
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • Rice or veggies, for serving


Instructions

  1. Heat vegetable oil in a pan over medium heat.
  2. Season the salmon fillets with salt and pepper.
  3. Add the salmon to the pan and cook for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.
  4. In the same pan, add the finely chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  5. Stir in the curry powder and cook for another minute.
  6. Pour in the coconut milk and let it simmer for a few minutes.
  7. Add the cooked salmon back into the pan and coat it in the sauce.
  8. Serve with rice and/or veggies.

Notes

For a thicker sauce, let it simmer longer. Adjust seasoning to taste.
