Ingredients
- 1 cup shredded coconut
- 1/2 cup sweetened condensed milk
- 1/4 cup coconut cream
- 1/4 cup almond flour
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, coconut cream, almond flour, powdered sugar, vanilla extract, and salt until fully combined.
- Press the mixture evenly into the bottom of a lined 8×8 inch baking dish.
- Refrigerate for at least 2 hours to allow the mixture to set.
- After chilling, cut the mixture into bars and serve chilled.
Notes
For added texture, consider mixing in chopped nuts or swapping almond flour with whole wheat flour. Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
