Description

Delightful coconut chewies that evoke nostalgic memories and are easy to make with pantry staples.


Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish or line it with parchment paper.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add in the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Fold in the shredded coconut until evenly distributed.
  6. Spread the mixture evenly in the prepared baking dish.
  7. Bake for 20–25 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into squares and serving.

Notes

For a nutty flavor, toast the shredded coconut before adding it to the batter. Experiment with chocolate chips or nuts for extra texture.
