Description

A delicious blend of refried beans, seasoned ground beef, and melted cheese wrapped in warm tortillas, perfect for family gatherings.


Ingredients

  • 1 can (16 oz) refried beans
  • 1 lb ground beef
  • 1/4 cup water
  • 1 packet taco seasoning
  • 6 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup shredded Monterey Jack cheese
  • Sour cream (for serving)
  • Black olives (for garnish)
  • Chopped onions (for garnish)


Instructions

  1. Preheat the oven to 375°F.
  2. Cook the ground beef in a medium pan over medium heat until no longer pink; drain excess grease.
  3. Stir in taco seasoning and water; allow to bubble for a few minutes.
  4. Add refried beans to the beef mixture, blending until warm.
  5. Spread the beef and bean mix down the center of each tortilla, roll them up, and place in a baking dish seam-side down.
  6. Pour enchilada sauce over the rolled tortillas, then sprinkle with cheddar and Monterey Jack cheeses.
  7. Bake uncovered for 20-25 minutes until cheese is melted and bubbly.
  8. Serve with sour cream, black olives, and chopped onions.

Notes

For extra spice, consider adding diced jalapeños or a splash of hot sauce during preparation.
