Description

Delightful muffins that embody the flavors of classic French toast, covered in a sugary cinnamon coating for a cozy breakfast treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, salt, and ground cinnamon.
  3. In a large bowl, whisk together the melted butter, milk, eggs, ground nutmeg, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
  8. In a shallow dish, combine the remaining 1/2 cup sugar and 1 tablespoon ground cinnamon. While the muffins are warm, dip the tops into the mixture.
  9. Return muffins to the oven for an additional 2-3 minutes to crisp the tops.

Notes

For best results, use room temperature milk and eggs. Allow melted butter to cool slightly before combining to preserve the batter’s structure.
