Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp vanilla extract
- 1/2 cup granulated sugar (for coating)
- 1 tbsp ground cinnamon (for coating)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a medium bowl, whisk together the flour, 1 cup of granulated sugar, baking powder, salt, and ground cinnamon.
- In a large bowl, whisk together the melted butter, milk, eggs, ground nutmeg, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
- In a shallow dish, combine the remaining 1/2 cup sugar and 1 tablespoon ground cinnamon. While the muffins are warm, dip the tops into the mixture.
- Return muffins to the oven for an additional 2-3 minutes to crisp the tops.
Notes
For best results, use room temperature milk and eggs. Allow melted butter to cool slightly before combining to preserve the batter’s structure.
