  • 217 grams fresh milled soft white wheat flour (for dough)
  • 270 grams whole milk (for dough)
  • 14 grams instant yeast (for dough)
  • 47 grams sugar (for dough)
  • 2¼ teaspoons salt (for dough)
  • 2 eggs (for dough)
  • 93 grams butter, softened (for filling)
  • 130 grams brown sugar (for filling)
  • 15 grams cinnamon (for filling)
  • 8 oz. cream cheese, softened (for frosting)
  • 60 grams butter, softened (for frosting)
  • 250 grams powdered sugar (for frosting)
  • 1 tablespoon vanilla extract (for frosting)
  • ¼ teaspoon salt (for frosting)


Instructions

  1. Make the Tangzhong: In a saucepan, combine 27 grams of fresh milled hard white wheat flour, 60 grams of whole milk, and 44 grams of water. Cook over medium heat, whisking constantly until thickened into a paste. Remove from heat and let cool.
  2. Make the Dough: In a mixing bowl, blend the cooled Tangzhong with 405 grams of fresh milled hard white wheat flour, 217 grams of soft white wheat flour, 270 grams of whole milk, 14 grams of instant yeast, 47 grams of sugar, 2¼ teaspoons of salt, and 2 eggs. Mix until a cohesive dough forms.
  3. Knead the Dough: Knead the dough for about 10 minutes until smooth and elastic. Incorporate 93 grams of softened butter and knead for another 5 minutes. Transfer the dough to a greased bowl and cover it. Let it rise in a warm area for 1 to 2 hours, until it doubles in size.
  4. Roll and Fill: Punch down the risen dough and roll it out on a floured surface into a rectangle. Spread 93 grams of softened butter over the surface. Blend together 130 grams of brown sugar and 15 grams of cinnamon, then sprinkle it evenly over the buttered dough.
  5. Shape the Rolls: Starting from one end, roll the dough tightly into a log. Cut the log into equal pieces and place them in a greased baking dish, ensuring adequate space between them. Cover and allow the rolls to rise for another 30 minutes.
  6. Bake: Preheat your oven to 350° F (175° C). Bake the rolls for 25-30 minutes until golden brown.
