Description

Cinnamon roll protein muffins bring a delicious twist to breakfast or snack time, offering comforting flavors with a nutritious boost.


Ingredients

  • 1 cup rolled oats
  • 1 scoop vanilla protein powder
  • 1 tablespoon ground cinnamon
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk of choice
  • Optional: chopped nuts or raisins


Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
  2. In a large mixing bowl, combine the rolled oats, protein powder, ground cinnamon, baking powder, and any optional ingredients.
  3. In another bowl, whisk together the honey or maple syrup, eggs, applesauce, vanilla extract, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  6. Bake in the preheated oven for 15-20 minutes, or until the muffins turn golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

You can experiment with additional spices like nutmeg or ginger, or substitute applesauce with mashed bananas for variation.
