Ingredients

  • 2 cups (about 450 g) Brussels sprouts, shredded
  • 2 medium apples, thinly sliced
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (2.6 g) ground cinnamon
  • 2 tablespoons (30 ml) honey
  • 1/4 cup (30 g) chopped walnuts
  • 1/4 cup (30 g) dried cranberries
  • 1 tablespoon (15 ml) lemon juice
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine sliced apples with olive oil and ground cinnamon.
  3. Spread the apples on a baking sheet lined with parchment paper.
  4. Roast apples in the preheated oven for 15-20 minutes until tender.
  5. While apples are roasting, shred Brussels sprouts if not already done.
  6. In a large bowl, mix shredded Brussels sprouts with lemon juice, salt, and pepper.
  7. Once roasted, add apples to the Brussels sprouts mixture.
  8. Add chopped walnuts and dried cranberries to the bowl.
  9. Drizzle honey over the mixture and toss everything to combine.
  10. Adjust seasoning with additional salt and pepper if needed.
  11. Serve immediately or refrigerate for later use.

Notes

  • Evenly coat the apple slices with olive oil and cinnamon before roasting for well-seasoned apples.
  • Toss the Brussels sprouts mixture thoroughly after adding roasted apples, walnuts, and cranberries for even flavor distribution.
  • Consider adding a sprinkle of fresh herbs like parsley or thyme for a touch of freshness before serving.
