A delightful twist on classic sourdough, featuring the comforting flavors of cinnamon and brown sugar, perfect for warming up your home.
Ingredients
- 350 g warm water (85℉)
- 100 g active sourdough starter
- 25 g granulated sugar
- 500 g unbleached all-purpose flour
- 11 g kosher salt
- 2 tablespoons ground cinnamon
- 135 g dark brown sugar
Instructions
- In a large mixing bowl, combine warm water and active sourdough starter, whisking together.
- Add 25 g of granulated sugar to the mixture and whisk thoroughly.
- Mix in unbleached flour with a wooden spoon until it becomes thick.
- Bring the shaggy dough together with clean hands and add 11 g of kosher salt.
- Cover the bowl with plastic wrap and let it rest for 30 minutes.
- After resting, use damp hands to incorporate the salt into the dough and shape it into a round.
- Cover and rest again for 30 minutes.
- Perform stretch and folds every 30 minutes for 3-4 hours until puffy.
- After rising, gently stretch the dough into a rectangle and layer with ground cinnamon and dark brown sugar.
- Fold the dough and shape into a boule.
- Place in a proofing basket lined with a floured tea towel, cover, and proof in the fridge for 2-3 hours.
- Preheat a Dutch oven to 450℉ for 25-30 minutes.
- Score the top of the loaf and bake inside the Dutch oven for perfect results.
Notes
For best results, ensure your sourdough starter is active. Allow bread to cool for at least 30 minutes before slicing.
