Description

A vibrant and flavorful rice dish that elevates any meal with fresh cilantro and zesty lime.


Ingredients

  • 2 cups long grain white rice (uncooked)
  • 2 cups water
  • 4 tablespoons unsalted butter
  • ½ cup cilantro (finely chopped)
  • Zest and juice of 1 lime
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder


Instructions

  1. Rinse the rice under cold, running water in a fine mesh sieve to remove excess starch.
  2. In the bowl of the rice cooker, combine the rinsed rice and water. Set the rice cooker to the ‘plain’ setting or follow the instructions provided with your rice cooker.
  3. Once the rice is cooked, carefully open the rice cooker to release the steam. Fluff the rice with a fork to separate the grains.
  4. Add the butter, cilantro, lime zest, lime juice, kosher salt, black pepper, and garlic powder to the cooked rice in the rice cooker. Mix gently until well combined.

Notes

For enhanced flavor, consider toasting the rice before cooking. Substitute fresh cilantro with parsley if needed.
