Description
A vibrant and refreshing rice dish featuring fragrant coconut milk, fresh cilantro, and zesty lime, perfect as a side or standalone.
Ingredients
- 1 cup jasmine rice or basmati rice
- 1 ½ cups full-fat or light canned coconut milk
- ½ teaspoon salt
- ½ cup chopped fresh cilantro
- Juice and zest of ½ a large lime
Instructions
- Rinse the jasmine rice thoroughly under cold water until the water runs clear, then drain and set aside.
- In a medium pot, add the rinsed rice, coconut milk, and salt.
- Cover the pot and bring to a simmer over medium-high heat.
- Once simmering, reduce the heat to medium-low. Cook for 15-20 minutes, until all the liquid has been absorbed and the rice is tender.
- After cooking, remove the pot from heat and let it sit for 5 minutes.
- Fluff the rice with a fork and add the chopped cilantro, lime zest, and lime juice. Stir to combine.
Notes
For variations, try adding fresh herbs like mint or parsley, or stir in sautéed vegetables for additional flavor and texture.
