Ingredients

  • 2 pounds salmon fillet (0.9 kg)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1 tablespoon honey (15 ml)
  • 1 teaspoon Dijon mustard (5 ml)
  • Salt to taste
  • Black pepper to taste
  • 2 large carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 1 sweet potato, peeled and cut into chunks
  • 1 red onion, cut into wedges
  • 2 cloves garlic, minced


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, apple cider vinegar, honey, and Dijon mustard.
  3. Add salt and black pepper to taste and mix well.
  4. Place salmon fillet on a baking sheet lined with parchment paper.
  5. Brush the salmon with half of the prepared cider mixture.
  6. In a large bowl, combine carrots, parsnips, sweet potato, and red onion.
  7. Add minced garlic, salt, and black pepper to the veggies to taste.
  8. Drizzle the remaining cider mixture over the vegetables and toss to coat evenly.
  9. Spread the vegetables in a single layer around the salmon on the baking sheet.
  10. Roast in the preheated oven for 25-30 minutes or until salmon is cooked through and veggies are tender.
