Ingredients
- 2 pounds salmon fillet (0.9 kg)
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon apple cider vinegar (15 ml)
- 1 tablespoon honey (15 ml)
- 1 teaspoon Dijon mustard (5 ml)
- Salt to taste
- Black pepper to taste
- 2 large carrots, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 1 sweet potato, peeled and cut into chunks
- 1 red onion, cut into wedges
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, and Dijon mustard.
- Add salt and black pepper to taste and mix well.
- Place salmon fillet on a baking sheet lined with parchment paper.
- Brush the salmon with half of the prepared cider mixture.
- In a large bowl, combine carrots, parsnips, sweet potato, and red onion.
- Add minced garlic, salt, and black pepper to the veggies to taste.
- Drizzle the remaining cider mixture over the vegetables and toss to coat evenly.
- Spread the vegetables in a single layer around the salmon on the baking sheet.
- Roast in the preheated oven for 25-30 minutes or until salmon is cooked through and veggies are tender.
- Remove from the oven and let rest for a few minutes before serving.
