Ingredients
- 1 cup green or brown lentils (200 g)
- 2 tablespoons olive oil (30 ml)
- 2 large onions, thinly sliced
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 2 cups vegetable broth (480 ml)
- 1 cup apple juice (240 ml)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (1 g)
- 1 bay leaf
- 2 tablespoons apple cider vinegar (30 ml)
- 1 tablespoon honey or maple syrup (15 ml)
- 1/4 cup chopped fresh parsley (15 g)
Instructions
- Rinse and drain the lentils thoroughly.
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add the sliced onions to the pot.
- Cook onions, stirring occasionally, until caramelized, about 20-25 minutes.
- Remove the caramelized onions from the pot and set aside.
- Add the remaining 1 tablespoon of olive oil to the pot.
- Add minced garlic and cook for 1 minute, stirring constantly.
- Stir in the lentils, salt, black pepper, and dried thyme.
- Pour in the vegetable broth and apple juice.
- Add the bay leaf to the pot.
- Bring the mixture to a boil over high heat.
- Reduce the heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
- Remove and discard the bay leaf.
- Stir in the apple cider vinegar and honey or maple syrup.
- Add the caramelized onions back to the pot.
- Cook for an additional 5 minutes, stirring occasionally.
- Remove the pot from heat.
- Stir in the chopped fresh parsley.
- Adjust seasoning with more salt and pepper if needed.
- Serve warm.
