Ingredients

  • 1 cup green or brown lentils (200 g)
  • 2 tablespoons olive oil (30 ml)
  • 2 large onions, thinly sliced
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 2 cups vegetable broth (480 ml)
  • 1 cup apple juice (240 ml)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (1 g)
  • 1 bay leaf
  • 2 tablespoons apple cider vinegar (30 ml)
  • 1 tablespoon honey or maple syrup (15 ml)
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Rinse and drain the lentils thoroughly.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  3. Add the sliced onions to the pot.
  4. Cook onions, stirring occasionally, until caramelized, about 20-25 minutes.
  5. Remove the caramelized onions from the pot and set aside.
  6. Add the remaining 1 tablespoon of olive oil to the pot.
  7. Add minced garlic and cook for 1 minute, stirring constantly.
  8. Stir in the lentils, salt, black pepper, and dried thyme.
  9. Pour in the vegetable broth and apple juice.
  10. Add the bay leaf to the pot.
  11. Bring the mixture to a boil over high heat.
  12. Reduce the heat to low, cover, and simmer for 30-35 minutes until lentils are tender.
  13. Remove and discard the bay leaf.
  14. Stir in the apple cider vinegar and honey or maple syrup.
  15. Add the caramelized onions back to the pot.
  16. Cook for an additional 5 minutes, stirring occasionally.
  17. Remove the pot from heat.
  18. Stir in the chopped fresh parsley.
  19. Adjust seasoning with more salt and pepper if needed.
  20. Serve warm.
