Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, salt, and ground cinnamon in another bowl.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Scoop out dough and roll into balls.
- Combine the cinnamon and sugar for coating in a small bowl.
- Roll each ball in the cinnamon-sugar mixture and place them on a lined baking sheet, spacing them apart.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool slightly before transferring to a wire rack to cool completely.
