Description

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups fresh cranberries
  • For the streusel: ½ cup all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ cup butter, softened


Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch baking dish.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the cranberries.
  7. Pour the batter into the greased baking dish.
  8. In a separate bowl, combine the flour, sugar, and cinnamon for the streusel.
  9. Cut in the softened butter until the mixture resembles coarse crumbs.
  10. Sprinkle the streusel mixture evenly over the batter.
  11. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Notes

For an extra crunchy streusel, replace half of the flour with oats. Consider adding vanilla extract or nutmeg for extra flavor.
