Description

A delightful Christmas dessert featuring tangy cranberries in a soft cake topped with a sweet sugar cookie streusel.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 cups fresh cranberries
  • ½ cup all-purpose flour (for streusel)
  • ½ cup granulated sugar (for streusel)
  • ½ teaspoon ground cinnamon (for streusel)
  • ¼ cup butter, softened (for streusel)

Instructions

  1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time until well incorporated.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the butter mixture until just combined.
  6. Gently fold in the cranberries.
  7. Pour the batter into the prepared baking dish, spreading it evenly.
  8. For the streusel, combine flour, sugar, and cinnamon, then cut in softened butter until it resembles coarse crumbs.
  9. Sprinkle streusel mixture generously over the batter.
  10. Bake for 45 to 50 minutes, checking with a toothpick for doneness.
  11. Allow to cool for a few minutes before serving.
