Delicious bites made from ripe bananas, creamy peanut butter, and rich dark chocolate, perfect for a snack or dessert.
Ingredients
- 3 ripe bananas
- 1/3 cup natural peanut butter
- 1/2 cup dark chocolate chips
- 2 teaspoons coconut oil
Instructions
- Peel and slice the bananas into rounds about 1/4 inch thick.
- Line a platter or small baking sheet with parchment paper.
- On each slice, place about 1/2 teaspoon of peanut butter and top with another slice, forming a little sandwich.
- Repeat until all banana slices are used to create about 30 bites.
- Place the bites on the lined platter and freeze for about 60 minutes.
- Melt the chocolate by combining it with coconut oil in a microwave-safe bowl. Microwave for 1 minute, then stir. Continue microwaving in 30-second increments until melted.
- Remove the frozen banana bites from the freezer and dip each bite halfway into the melted chocolate.
- Return the chocolate-covered bites to the parchment-lined platter and repeat until all bites are coated.
- Freeze for another 15 minutes to harden.
Notes
Ensure bananas are ripe for the best flavor. You can add sea salt or experiment with different nut butters.
