Ingredients
- 6 chicken breasts (thin-sliced)
- 1 container green onion cream cheese (8 oz / 226 g)
- 60 ml olive oil
- 120 ml chicken broth
- 1 Large package of sliced mushrooms
- 1 small bag of fresh baby spinach
- 1 dash Weber Herb and Garlic Seasoning
- 227 g shredded mozzarella cheese
Instructions
- Arrange the chicken breasts in a single layer within a 13×9-inch baking pan.
- Add a layer of spinach, mushrooms, and a sprinkle of seasoning (sauté fresh mushrooms beforehand).
- In a bowl, blend together the green onion cream cheese, chicken broth, and olive oil.
- Pour this mixture over the layer of mushrooms.
- Drape a piece of foil over the top without crimping the edges, and place in an oven preheated to 375°F for 20 minutes.
- Afterwards, take off the foil and continue baking for an additional 20 minutes.
- Top the dish with the shredded mozzarella cheese and return to the oven for 5-10 minutes more, or until the cheese is melted and starts to bubble.
