Ingredients

  • 2 cooked, boneless chicken breast halves, shredded (500g)
  • 4 cups (960 ml) chicken broth (1 liter)
  • 2 cups water (500ml)
  • 1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet (127g)
  • 2/3 cup beef bacon, chopped (80g)
  • 5 teaspoon (3 ml) salt
  • 5 teaspoon (3 ml) ground black pepper
  • 5 cup (120 ml) vegetable oil
  • 2 cups (480 ml) coconut cream


Instructions

  1. In a large pot, mix together the shredded chicken, chicken broth, and water. Heat on medium until it begins to boil, then add the rice, saving the seasoning packet for later. Cover the pot and take it off the heat.
  2. In a small bowl, blend together the salt and ground black pepper.
  3. In a medium saucepan, heat the vegetable oil over medium heat. Add the contents of the seasoning packet and stir until it starts to bubble. Lower the heat and gradually incorporate the salt and pepper mixture into the saucepan, stirring constantly to create a roux. Gradually whisk in the coconut cream until everything is well-blended and smooth. Allow it to cook and thicken for about 5 minutes.
  4. Combine the thickened mixture with the chicken broth and rice in the pot. Cook over medium heat until it is thoroughly warmed, approximately 10 to 15 minutes.
  5. Serve while hot and savor the flavors!
