Description

A quick and flavorful chicken and vegetables skillet, perfect for weeknight dinners, featuring tender chicken breast and vibrant vegetables.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken with salt, pepper, and Italian seasoning. Add to skillet and cook until browned and cooked through, about 5-7 minutes per side.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and sauté for about 30 seconds.
  5. Add the bell peppers, zucchini, and broccoli, sautéing until tender, about 5-7 minutes.
  6. Return the chicken to the skillet, mix well, and heat through. Serve immediately.
