Ingredients

  • – 2 boneless, skinless chicken breasts (500g)
  • – 10 ounces (285g) green beans
  • – 1 large yellow onion
  • – 2 large garlic cloves
  • – 1/2 teaspoon (3 ml) ground ginger
  • – 1/2 teaspoon (3 ml) black pepper
  • – 5 tablespoons (75 ml) vegetable oil divided
  • – 1/4 cup (60 ml) crushed, unsalted peanuts optional (or use sesame seeds if desired)
  • – 1/3 cup (80 ml) soy sauce
  • – 1/4 cup (60 ml) apple juice
  • – 3 tablespoons (45 ml) rice vinegar
  • – 2 tablespoons (30 ml) brown sugar
  • – 2 teaspoons (10 ml) cornstarch
  • – 1 teaspoon (5 ml) sesame oil


Instructions

  1. Cut the chicken breasts into uniform strips and thinly slice the onion and garlic. Halve the green beans.
  2. Warm 3 tablespoons of oil in a large, wide, rimmed frying pan over medium-high heat.
  3. Sprinkle the chicken strips with ground ginger and black pepper.
  4. Lay the chicken evenly in the hot oil and brown both sides until fully cooked, approximately 5 minutes.
  5. Transfer the chicken to a separate plate.
  6. Add the green beans, garlic, and onions to the hot skillet and sauté for 7-10 minutes, stirring from time to time. If needed, add up to 2 more tablespoons of oil to ensure proper cooking.
  7. As the green beans are cooking, combine all the ingredients for the sauce in a large bowl, ensuring that the cornstarch and brown sugar are fully dissolved.
  8. Once the green beans are tender yet crisp and the onions are softened and caramelized, lower the heat to medium and place the chicken back in the skillet along with any juices that have collected on the plate.
  9. Drizzle the sauce over everything and mix well to coat. Let it cook, stirring often, until the sauce thickens. (There will be extra sauce in the pan).
  10. Serve with rice or noodles, topped with a generous amount of sauce.

Notes

  • Add extra crunch and flavor by sprinkling crushed peanuts or sesame seeds on top before serving.
  • Marinate chicken strips in soy sauce and sesame oil for 30 minutes before cooking to enhance the dish’s flavors.
  • Adjust the sweetness and tanginess of the sauce by varying the amounts of brown sugar and rice vinegar to your taste.
