A delightful cherry cake recipe that combines soft cake, rich butter, and sweet glacé cherries, bringing warmth and nostalgia to every occasion.
Ingredients
- 200 g glacé cherries (keep a few for decoration)
- 225 g self-raising flour
- 160 g butter, at room temperature
- 160 g caster sugar
- 3 large eggs
- 25 g ground almonds
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (180°C) and grease and line a round cake pan.
- Cream together the room temperature butter and caster sugar until light and fluffy.
- Beat in the eggs one at a time, ensuring each is well incorporated before adding the next.
- Stir in the vanilla extract, followed by ground almonds and the self-raising flour. Mix until just combined.
- Gently fold in the chopped glacé cherries, ensuring an even distribution.
- Pour the mixture into the prepared cake pan and smooth the top, decorating with reserved glacé cherries.
- Bake in the preheated oven for about 25–30 minutes or until a skewer inserted into the center comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
