Description

A delightful cherry cake recipe that combines soft cake, rich butter, and sweet glacé cherries, bringing warmth and nostalgia to every occasion.


Ingredients

  • 200 g glacé cherries (keep a few for decoration)
  • 225 g self-raising flour
  • 160 g butter, at room temperature
  • 160 g caster sugar
  • 3 large eggs
  • 25 g ground almonds
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (180°C) and grease and line a round cake pan.
  2. Cream together the room temperature butter and caster sugar until light and fluffy.
  3. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next.
  4. Stir in the vanilla extract, followed by ground almonds and the self-raising flour. Mix until just combined.
  5. Gently fold in the chopped glacé cherries, ensuring an even distribution.
  6. Pour the mixture into the prepared cake pan and smooth the top, decorating with reserved glacé cherries.
  7. Bake in the preheated oven for about 25–30 minutes or until a skewer inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
